Banana Bread ( Low Carb , Gluten Free, Keto ) Almond Meal and Coconut Flour

Almond Meal and Coconut Flour Banana Bread / Muffins

A Low Carb, Gluten Free fix... Made Easy !!


2 Bananas - Ripe
2 Tablespoon Coconut Oil (Or you can use Olive Oil, Butter )
1/2 Teaspoon Vanilla Essense
2-3 Eggs (i used 2 ... 3 would be better)
2 Tablespoon Coconut Cream (Optional)
1 teaspoon Stevia (Optional)
3/4 Cup Almond Meal
1/4 Cup Coconut Flour
3/4 Teaspoon Baking Soda (dash of lemon juice to activate it)
1/4-1/2 cup of broken walnuts

  1. Preheat the oven to 175C 
  2. Mix all the wet ingredients (i used a hand blender )
  3. Mix all the dry ingredients into the wet mixture
  4. lightly grease either a muffin pan or breadloaf pan 
  5. bake it for 40-45 mins at 175C or until nice brown on the top and toothpick comes out clean
  6. Let is rest for atleast an hour ... and you are done , Easy !!
  • You can garnish with grated coconut 
  • Coconut flour is drying to do not use too much .. keep the ratio or almond meal to coconut flour for best results
